The pantry is small on purpose. We don't carry seventeen olive oils — we carry one, from one farm, pressed twelve days ago. When it's gone, it's gone until next October.

Three plates a week

Tuesday, Sunday, the long Thursday.

A pantry isn't a brand. It's the things you reach for at the back of the cupboard. We try to make those things very, very good.

Tuesday, fast

Aglio, olio, anchovy, done.

A pound of #14, half a bottle of EVOO, six anchovies. Fifteen minutes from a cold start. We tested this recipe at the deli for a year before we shipped the first jar.

Sunday, slow

Four hours, one ragù.

Two cans of pomodorini, a glass of red, a pound of pork shoulder, and a long afternoon. Rafael wrote this recipe down for us — the card ships in every pantry box.

Thursday, late

Bread, oil, salt, table.

On the night nothing's planned, we open a tin of Cantabrian anchovies, tear a hunk of bread, and pour the EVOO straight on. Cena. Fatto.
