Tuesday, fast
A pound of #14, half a bottle of EVOO, six anchovies. Fifteen minutes from a cold start. We tested this recipe at the deli for a year before we shipped the first jar.
Sunday, slow
Two cans of pomodorini, a glass of red, a pound of pork shoulder, and a long afternoon. Rafael wrote this recipe down for us — the card ships in every pantry box.
Thursday, late
On the night nothing's planned, we open a tin of Cantabrian anchovies, tear a hunk of bread, and pour the EVOO straight on. Cena. Fatto.
The Italian aisle in a US supermarket is, mostly, an Italian-themed aisle. We import the actual thing.
